Queso Fundido is the Tex-Mex answer to Fondue. Think cheesy, melty, delicious cheese with chilies and tomatoes!
Todd is the co-owner of Taqueria 27, so he knows his tortilla chips and how to make them more exciting! He shared a recipe for this Queso on Fox 13, The Place to help us make the most of National Tortilla Chip Day on Monday, February 24th.
Likely originating on the border of northern Mexico and the southern United States, the queso was often made in a cast-iron skillet over a campfire and called queso flameado.
- 1 cup shredded cheese blend (we used a mix of melty Mexican cheeses)
- 1 tablespoon Mexican Queso Fresco or Cotija Cheese
- 1/4 Cup Green Chile Sauce
- 1/4 Cup Salsa Fresca or Pico de Gallo
- Cilantro to garnish
- Serve with Corn Chips or Flour Tortillas
Add the cheese, green chilies, and salsa to a small saucepan and place over medium heat. Stir constantly until the cheese is melted and creamy. Enjoy hot with warmed corn or flour tortillas or with corn chips.
Jazz up your queso with cooked, crumbled chorizo, the sauce from a can of chipotles, or even some sauteed garlic.
